Cowboy Queso

This queso dip is one of my favorite dishes to make for large get togethers. Its super easy to make, packs a ton of flavor and feeds a crowd! Every time I make this someone always asks for the recipe.

This can be served as a dip with tortilla chips or you can top your own burrito bowls or nachos with it.


Cowboy Queso

This Cowboy Queso sure is a crowd pleaser, whether you are at a Superbowl party or just having a taco night , everyone will scoop this right up!

Ingredients:

  • 1 medium onion, diced
  • 1 lb ground beef
  • 3 jalapenos, diced
  • Salt and pepper, to taste
  • 1-2 Tablespoons of cumin
  • 1 Tablespoon of chili powder
  • 1 Tablespoon chili powder
  • Pinch of Crushed Red Pepper Flakes
  • 1 cup Pale Ale, I use Bell's Two Hearted Ale
  • 1 cup Pepper Jack cheese, shredded
  • 32 oz Velveeta cheese, cubed
  • 2 (14.5 oz.) cans Rotel Tomatoes, partially drained
  • 2 (15.05 oz) cans black beans, drained and rinsed
  • 1/2 cup fresh cilantro, chopped

Instructions:

How to cook Cowboy Queso

  1. In a large cast iron skillet, over medium-high heat, brown and crumble the ground beef, season with salt and pepper. Add in the diced onions. When almost browned, season with cumin powder and chili powder. 
  2. Once browned, drain excess grease (if there is any), add in the crushed red pepper flakes and the beer. Let the beer reduce for about 5 minutes.
  3. Add in the Velveeta cheese a few cubes at a time, once some of the cheese has melted, add in the rest of the cheese. Once all the Velveeta has melted stir in the peperjack cheese.
  4. Once the pepperjack cheese is melted add in the cilantro, and beans.  Add in the partially drained rotel. You can adjust how much liquid from the Rotel you want to add depending on the thickness of the queso.
  5. Serve with tortilla chips and enjoy!

Notes:

After done cooking this can be served either from the skillet, or for parties you can place in crockpot on warm You can also add corn to the queso

Office Makeover

My husband and I bought our first home in July, and finally moved in this September. We had granted our Seller's occupancy so that left me a lot of time to stalk Pinterest and plan out how I wanted to decorate every room of our new house. One of the rooms I have really been looking forward to was an office space. I do occasionally work from home, so it would be really nice to have a dedicated area to work as well as having a set space to do other planning. Nathan and I spent a lot of time painting different rooms in the house, putting in a shiplap wall and other various things you do when you move in so it took some time before we started on my office. But finally, my office is complete and I am beyond thrilled with how it turned out!

My office is the only place in the house that is truly "My" space and I couldn't wait to have a girly domain. I absolutely ADORE Kate Spade and wanted my office to reflect this. I'm obsessed with the whole blush pink and gold theme which I included in my wedding, so you know I was going to draw off of that inspo for this space as well.

The first thing we needed to do was give the space a fresh paint job.  I wanted to paint three of the walls a light blush pink ( I chose Opulent Opal by Valspar 1005-6c) and the third wall I was considering this gorgeous rose gold cracked marble wallpaper, but it turns out that the wallpaper alone would have been over $250! Don't get me wrong, the paper was beautiful but this homegirl is on a budget! After some research I found these really neat peel and stick gold dots from Amazon and I knew exactly what to do with them. We painted the fourth wall white and my husband and I measured out and leveled line by line where each gold dot would go. I spent $9.50 on 200 gold dots and only used about 120 of them! Much better than the $250 wallpaper. Not only were the gold dots a cost saving but they totally embody Kate Spade.




I would describe the style in my home as modern farmhouse (Yes, I love Joanna Gaines) but I also really love mid century modern. My office was the perfect place to pull in mid century modern pieces with lots of gold touches. Target's Project 62 line is awesome if you haven't checked it out, and is where I got my tripod lamp, marble side table, gold picture frames, wall planters and large gold circular mirror. I also replaced the handles on the closet door with gold handles from the Project 62 line at Target.





I wanted the office to have a very clean but chic girl boss feel to it. My office would be a place for me to work and to collab with friends, so it needed to accommodate at least one other person. I initially was thinking a plush padded chair would be perfect for the corner of my office, but I was concerned that would take up too much space as my office isn't that large of a room. I ended up deciding on a clear acrylic chair, which I freaking love. It's so funky and modern and very on trend I ended up getting a great deal on my chair from Wayfair. I paid only $69.95 for the chair. Most places I looked online and in store were marked at about $100 so I was excited to get a good deal. (I am always looking for the best deal so stay tuned for lots of great deals).

The office was feeling a bit cold and too modern, so I needed something to cozy up the space. At first I was thinking that a faux sheepskin throw would be perfect to accompany my acrylic chair so I started looking online. To my surprise faux throws weren't as budget friendly as I'd expected, so I held off ordering one from Amazon. I really liked the idea of the shag throw but needed to spend some more time researching where to get a quality one. At the same time I knew a rug would be a great way to warm up the space but, I hadn't found what I was looking for. One day my husband and I were in line at Costco waiting to check out when I noticed a woman in the line next to us. She had a gigantic sheepskin rug in her cart. I walked over and asked her how much the rug was and she told me $99 dollars and I couldn't believe it! I was looking at spending $60 dollars on amazon for a faux throw that was not even half the size. Nathan was the one who actually convinced me to get it and ran back and grabbed if for me, and boy I am so happy that he did! I got a quad sheepskin rug for only $99 dollars! You cannot beat that deal. I absolutely love this rug and my pups love it too.


For the wall art I ended up finding these really cute 8 x 10 gold picture frames from Target's Project 62 line. The prints were downloadable art I found on Etsy. I also found the two geometric wall planter's from the same line. The large polka dot planter is by Opal House from Target. I saw Opal House's polka dot collection awhile ago at Target but I held off purchasing. I ended up getting this planter on clearance for only $5.09 when it was originally marked $16.99 and a matching large vase for only $5.99! I love macrame wall art and was able to find a really affordable one from Target. I paid about $15 dollars for mine!




The desk is from Ikea and is the Alex white desk. I paid $150 for my desk. I absolutely love that the desk has the panel flap in the back to keep cables out of sight. Inside the flap there are holes on both the left and right side for cables. It makes your work space clutter free. The desk came in white, so I bought some gold spray paint and some clear protectant spray and painted the legs gold. This was much cheaper than a lot of the gold and white desks that I looked at online. The desk is good quality and should last me a long time. I also love that the two drawers provide ample storage space. I found my desk chair from WayFair and love that I found a chair in gold and white. I found some desk accessories by Kate Spade but felt that they were simply priced too high so I found very similar ones on Amazon. The stapler, tape dispenser and pen holder pictured below were all purchased on Amazon.




My filing cabinet is from HGTV. I love that the cabinet is wide enough for my printer to go on. The bottom drawer is perfect for hanging files while the top drawer is additional storage. I was thrilled to find a filing cabinet with gold hardware. I paid just under $64 dollars for this filing cabinet.



Overall I absolutely love my office. It is my favorite room in the whole house. I love that I have a space that truly feels like me. The Keto Diet

At this point, I am sure that a lot of you have heard about the Keto Diet which is short for The Ketogenic Diet. It's a diet that is high fat, low carb, and moderate protein. The Keto diet has been gaining popularity and celebrities like Vinny from the Jersey Shore aka "The Keto Guido" have brought a lot of attention to eating this way. Before my wedding in 2017 I decided to give this diet a try as I had ordered a wedding dress three sizes too small and had 6 months to fit into my dress. I know, I'm totally crazy! Typically I don't do well on restrictive diets and always end up giving in and then going to town on sugar. I was a bit nervous to try out a high fat/low carb diet. You see, I'm a big sweets person. Giving up sugar seemed like it would be awful, but I really needed to drop the weight. When I first heard about the diet, it seemed a bit contradictory to everything that we've been taught about whats healthy and how you should eat to lose weight, but I did a lot of research and what I was reading made a lot of sense.  I had read about so many success stories. I decided that I really didn't have anything to lose and that I would give it a try, I needed a change.

In January 2017, I started working out about 4-5 times a week, watching what I eat and as a result I lost 10.6 pounds that month. My husband and I started the Keto diet February 15, 2017 and  I was hitting the gym 5-6 times a week. From that point until my wedding day I dropped a total of 55 pounds and felt completely amazing. In January, I weighed 269 pounds and in June I walked down the aisle at 216 pounds. The Keto Diet didn't make me feel restricted like I thought it would. I was able to eat so many foods that I enjoyed. Surprisingly, I didn't crave sweets like I used to. I also found that my acne had mostly cleared up and my skin looked the best it had since I was about 11 years old. I have always struggled with acne and had problem skin. Before going Keto I thought that I had a sensitivity to dairy as anytime I ate cheese or moderate amounts of dairy I would get an upset stomach, but my stomach issues cleared up. I think that by me eliminating sugar and gluten from my diet it really cleared up a lot of the issues I was experiencing.



Nathan and I decided that for our honeymoon, we would treat ourselves and eat however we wanted. Well, we kinda spiraled and continued that after the honeymoon. I found a million excuses to I found skip the gym, eat whatever I wanted and of course drink beer. This lead to my weight gain and here I am almost at my starting weight again. My clothes are tight, I can see the gains in my face and other areas of my body  and my energy levels have been so low. My acne is back to being problematic and some of my stomach issues have returned. I did briefly try weight watchers and I liked that there was a lot of freedom and less restriction with the diet. I also loved the weight watchers app, but I haven't found it to be as good of a fit for me personally as when I was doing Keto. All of that to say is that I am going to start eating high fat, low carb, moderate protein again and Im really excited to share my journey with you all.

I will post updates on my progress as well as recipes of Keto recipes I love and enjoy. For the time being, here are a few pictures of my progress from 2017 doing the Keto Diet and exercising. If I did it before, I can do it again!

Rainbow City Roller Rink

Rainbow City Roller Rink is an art collection which has recently opened downtown Detroit. The collection is created by FriendsWithYou and brought to Detroit by the Library Street Collective. Rainbow City has also been installed in Toronto, New York and in Miami.  


The rink is located in Detroit, at 1001 Woodward Avenue which is kiddie corner from the Ice rink in Campus Martius. Skate times are Wednesday through Sunday from 2:00-9:00pm, however reservations must be scheduled in advance. You can reserve your skate time online at rainbowcitydetroit.com. Entrance to the rink is free, as well as skate and locker rentals. You must complete a waiver prior to entrance. Pro tip- print and fill out the waiver before getting to the rink to speed up the process. My husband and I pre-printed and filled out our waivers and we got to the front of the line this way as many people were spending their time waiting in line to get a waiver and then sitting around to fill them out. We were actually first in line to get into the rink. You are also requested to arrive 15 minutes before your skate time and you are given 45 minutes for your reservation. 

The installation is playful and quickly brings me back to childhood. The rink floor is green and white striped and there are large ballon-like installations on the ceiling that are multicolored. In the center of the ceiling is a large 30ft rotating "snowman" balloon. As standard at any roller rink there is fun upbeat music as well as multicolored lights flashing while you skate.


It clearly had been quite some time since Nathan or I have roller skated.  We may have almost wiped out a few times, but we eventually got into our skating groove. The installation has a circular bench in the middle of the floor which was a great place to stop and rest or to sit and snap a few pictures as you are not allowed to have your phone out while you are skating. 


Overall Nate and I  had a really great time. It was a fun way to spend some time on a Saturday. I would highly recommend checking out Rainbow City Roller Rink for any age. If you are interested in skating, don't forget to make your reservation online before the installation is taken down,. Rainbow City Roller Rink will be in Detroit until January 27th! 

                                                                      

The Fed Community

The Fed is hands down the cutest restaurant I have ever been to. The interior of the restaurant is a blend of farmhouse with major Anthropologie vibes. Right when you walk in to the restaurant you are welcomed by beautiful black and white tiles on the floor that say "Hello". The restaurant is completely stunning. If I'm being honest, I have nothing negative in the slightest to say about The Fed. This restaurant was once the Jossman State Bank and was built at the turn of the century. The owners, Sarah and James Schneider have spent two years renovating the former bank into the gorgeous venue that it is today. The Fed is located in Clarkston, MI and I highly recommend anyone nearby take some time to enjoy a meal or at least a drink at The Fed.




The Fed serves brunch on the weekends and lunch and dinner every day. I have been twice for brunch and once for dinner. Everything at The Fed is farm to table and they source a lot of their ingredients (maybe all) locally. Each meal that I have ordered and friend's meals that I tasted were delicious and I would for sure order each again.


The first time I went to The Fed was to celebrate a dear friend's birthday. We went for brunch so of course I ordered a Mimosa. My friend, Jackie raved about their goat cheese and honey toast so we started off with an order of that. I adore goat cheese and pair with honey on some crispy toast was phenomenal.  I ordered the Rancheros and she ordered the Lemon Souffle Pancakes. The Rancheros are stewed black beans, sharp cheddar cheese, fried eggs, whipped avocado, pico de gallo and crema served on corn tostadas. I splurged and added the pulled chicken for $2 more. I love a good southwest/Mexican inspired brunch entree and boy this did not disappoint! The Lemon Souffle Pancakes are made with ricotta, and served with fresh berries, raspberry syrup, and whipped cream. Im usually not that into pancakes but I went home looking for recipes to mimic these pancakes, because they were that good. I mentioned to the server that we were celebrating Jackie's birthday and she ended up bringing out a small dollop of chocolate chip cookie dough with a large sparkler candler. It was a perfect photo op, and the server really made Jackie feel special on her birthday. 



The second time I went to The Fed was for a girls day. We arrived between lunch and dinner and the kitchen was actually closed, so we sat by the bar and ordered a bottle of rosé. We were quickly seated in a large comfy window booth.  The server was really friendly, and made great suggestions. My friend Ashley and Jackie both ordered the Grass Fed Double Double Burger, I ordered a really great shrimp and scallop pasta (I don't think they carry on the menu, as it changes with local ingredients being available). Initially when my pasta came I kind of thought the portion was a bit small, however I was mistaken. It was the perfect amount! The flavors in the pasta were fantastic. I really hope they add this item back to their menu at some point. Ashley and Jackie both loved their Double Double Burgers. 







The third time I went to The Fed was with my husband and we were celebrating my birthday. We went early enough that we didn't have to wait for a table. We started off with Mimosas and this time I ordered myself those delicious Lemon Souffle Pancakes that Jackie had ordered previously. My husband orders pizza pretty much everywhere we go and here was no exception. Nathan ordered the Breakfast Pizza which had sausage gravy, sharp cheddar cheese, cherry wood smoked bacon, bell peppers, tomato and scrambled eggs. When our food came out, we noticed that my pancakes were burned. The server was very apologetic and had the kitchen remake them quickly. When they came back out they were perfect. The manager even stopped by to apologize and made sure to take it off our bill. We were very appreciative of the fact that they went out of their way as they didn't have to do that. They really handled the situation well. While we waited for the pancakes to be remade I ended up stealing a couple slices of Nathan's breakfast pizza. The pizza was plenty big enough for sharing, and it was banging! After we finished our meals the server brought out an eclair and ice cream dessert with a large sparkler candle on it. It was a really fun way to celebrate my birthday.







I look forward to returning to The Fed again. It for sure is one of my most favorite restaurants. They are able to accommodate large groups and have private dining rooms in the downstairs. The Fed is full of character and I love how they maintained original parts of the bank. The old vault of the bank was turned into a unique dining room for a large party and even one of the old security deposit rooms in the basement was converted to a bathroom. Dont forget to check out the bathroom when you stop by as they have really awesome wall paper and tilework! The Fed also has a patio which I look forward to sitting at one day. Holidays in Detroit

I absolutely love Detroit during the holiday season. The city really knows how to do it up! Not only are there many great restaurants and bars to eat at with family but the city completely transforms into a winter wonderland. The Holiday Markets at Cadillac Square are absolutely adorable and a great way to support small business. Cadillac Square also has a Lodge which will put you in the holiday spirit. Cadillac Lodge is decorated exceptionally and is a warm, inviting area for friends and family to gather around on couches, and at tables to play games and enjoy one another's company. There of course is a small bar in the Lodge where you can purchase beverages. Nathan and I sat inside for awhile warming up playing checkers. It was a simple way to spend some quality time together and we both enjoyed the nostalgia of playing checkers. My best friend and I also explored the city on our Detroit Day Date and we had a great time riding around the city on the Bird Scooters exploring all the best holiday spots!


        




Capital Park also has Holiday Market Shops and a large area to gather around fireplaces. Capital Park even has a small turf area for dogs! There is also a small shop to purchase Christmas trees as well as wreaths and other festive holiday plants.

 




Campus Martius has an outdoor ice skating rink and of course the 60 foot tall Christmas Tree proudly sitting on a platform above the fountain. This is the first year that the Tree was sourced from Metro Detroit. The tree is decorated with  about 19,000 lights and ornaments. It's one of my favorite spots to get a picture in front of every year. This year Campus Martius will host a second rink, however this one is not for ice skating, but roller skating! The Rainbow City Roller Rink is located at 1001 Woodward Ave just across the corner from the ice skating rink. The Roller Rink is completely free of charge, including skate rental, and lockers! The rink does accept walk ins however, it appears that they fill up very quickly, but you can make a reservation online! My husband and I have a reservation for this Saturday and I cannot wait!




The walk from Campus Martius to the  Spirit of Detroit Plaza is pretty magical. There are multi-colored light installations that guide your way and swinging benches to rest on the way there (even though the walk is short). My favorite is the arch walkway made from pine that is laced with white lights. It smells completely like Christmas as you walk through and of course is a perfect photo op! Once you get to the Plaza there are adorable igloos that are heated where you can lounge and play games like Jenga. I brought my Mom and younger sister, Kayla down and we played Jenga and had a great time. Of course, my luck I knocked the Jenga tower over.




 


       



I could go on forever but if you are looking for a fun way to spend an afternoon I would highly recommend visiting downtown Detroit during this holiday season.
